Known as Hamachi in Japan, this species is regarded of the highest culinary quality.
Imported as farm raised from Japan and wild caught from South Africa.
Yellowtail's defining characteristics are a clean flavor profile and a firm texture.
We have had great success marketing this fish in particular to the fine dining sector, where it's white flesh and medium to high fat content allow it to be used in a board range of cooking styles and preparations - not just sashimi.
