Fillets are dry cut, collar and rib cage on, from fish weighting 5lbs and over.
The fillet is packed on a Japanese backing board and cryovac packed in 110-micron bags.
The fillet have been deep frozen at -60 Deg. Celsius thus retaining as much integrity as possible.
